Ingredients
- 1 Cup (225g) cold butter cubed
- 1 1/4 Cup Sugar
- 2 Large Eggs
- 1/2 Cup dark coco powder
- 2 1/4 Cups Flour
- 1/4 teaspoon salt
- 1 teaspoon baking powder
- 2 Cups chocolate chips ( good quality dark chocolate drops)
Directions
- Preheat the oven to 180 Celsius.

Line baking trays with baking paper.

In the bowl of an electric mixer, combine the cubed butter and sugar & mix together on medium speed until fluffy, (Est 3-5 minutes).

Mix in the eggs one at a time.

Mix in the cocoa powder until well blended.

Mix in flour, salt and baking powder.

Mix in chocolate chips (FYI the dough is very thick.).

Remove bowl form mixer and gently knead briefly by hand to be sure the ingredients are well combined.

Divide the dough into golf ball size balls roll each portion of dough and flatten just slightly into a disc.

Place on the prepared baking sheets, a few inches apart. (eg they will double in size once cooked).

Bake 15-20 minutes.

Remove form oven and let cool on the baking trays for 10 minutes.

Transfer to a wire rack to cool completely.
