Sticky sticky date pudding with caramel source
Sticky Date Pudding Ingredients
- 300g chopped dried dates
- 1 cup water
- 1 teaspoon bicarbonate soda
- 1 cup brown sugar
- 100g unsalted butter
- 1 teaspoon vanilla bean paste
- 2 Eggs
- 1 cup self raising flour
- 1 cup chopped macadamias
Caramel Sauce Ingredients
- 400ml thickened cream
- 1 1/4 cups of brown sugar
- 1 teaspoon vanilla bean paste
- 70g unsalted butter
Sticky Date Pudding Directions
- Preheat oven to 180°C.
- Line baking dish with baking paper (16 x 26 cm tray).
- Coarsely chop 300g dates removing any pits and place into saucepan with 1 cup of water, heat on low heat for around 6-8 min until dates absorb water, then add 1 teaspoon of1 teaspoon bicarbonate soda, remove form heat and stir in as set aside to cool.
- Cream butter, sugar and vanilla in an electric mixer until well combined.
- Blend in eggs.
- Fold in dates until well combined.
- Fold in flour and macadamias nuts.
- Place in baking tray and bake for 45-50 min
Caramel Sauce Directions
- Place all ingredients (butter, cream & sugar) in heavy based pot.
- Bring ingredients to a boil and then turn down to and simmer for around 5 min.
- Remove from heat.
- Reheat when ready to server
